Southern Style Broccoli Casserole
Serves: 2 | Preparation & Cooking Time: 40 minutes
- 1 head of Broccoli, florets cut off from the stalks
- 2 cups shredded Cheddar cheese
- 1 cup crushed Wheat crackers
- 1 tablespoon Mayonnaise
Preheat the oven to 350 F
Put the broccoli florets in a saucepan, add enough water to cover the bottom. Cover it and bring to a boil over high heat. Cook the florets just past crisp tender. Drain the water & transfer the broccoli to another pan. Add cheese 7 mayonnaise and stir, add the wheat crackers and mix again to coat it nicely.
Scoop the casserole into a casserole dish. Top the remaining cheese and cracker crumbs.
Bake for 20 minutes and serve hot!
