Smashed Chickpea & Green Goodness Sandwich

The Smashed Chickpea & Green Goodness Sandwich is a delicious and healthy meal option that is packed with nutrients. It consists of bread slices or wrap filled with smashed chickpeas, spring onions, basil and mayonnaise. This sandwich is high in fibre, protein, vitamins and minerals, and it provides a great source of energy for an active lifestyle.

Serves: 2  |  Preparation & Cooking Time: 20 minutes

Ingredients:

  • Red Otter Farms Spicy Salad Blend
  • 2 cups Chickpea, boiled
  • 2-3 Spring Onion, finely chopped
  • 2-3 tablespoon Mayonnaise
  • 1 tablespoon Lemon juice
  • 4 slices of bread, toasted
  • Handful of basil leaves, chopped
  • 1 small Cucumber, sliced
  • Salt & pepper, to taste

Instructions:

Step 1:

In a bowl, smash the chickpeas with a fork. Combine it with chopped onions, lemon juice, basil & mayonnaise

Step 2:

Spread the prepared chickpea spread onto four slices of bread, put a layer of cucumbers and spicy greens. Top it with another slice of bread.

Serve it with your favourite dip or sauce.
