Rocca Salad

Rocca Salad is a popular Italian salad made with leafy greens, cucumber, tomatoes, fresh mint and pomegranate seeds. The salad is typically dressed with olive oil, garlic, and salt. It is often topped with roasted or toasted walnuts.The salad is a great way to get a healthy dose of vegetables and proteins in one meal.

Serves: 4  |  Preparation & Cooking Time: 15 minutes


  • Red Otter Farms Spicy Salad Blend
  • 1/2 cup Walnuts
  • 1 small Cucumber, unpeeled & diced
  • 2 small Tomatoes, finely chopped
  • Handful of fresh Mint leaves
  • 1/2 cup Pomegranate seeds
  • 2 tablespoon Olive oil
  • 2 tablespoon Maple syrup
  • 1 tablespoon Apple cider vinegar


Step 1:

Heat the walnuts in a pan until fragrant & golden in colour. Put the toasted walnuts in a blender along with oil, maple syrup, vinegar & whiz until it’s blended.

Step 2:

Roughly chop the salad leaves and toss them with mint leaves, cucumber, tomato & pomegranate

Step 3:

Drizzle the dressing & Serve
