Quinoa Kale Salad
Quinoa Kale Salad is a nutritious and delicious meal that is packed with protein, fibre, and antioxidants. It is made with quinoa, kale, tomatoes, chickpeas, red bell peppers, and a light dressing of olive oil, lemon juice, and garlic. Ingredients:
- 1/2 cup Quinoa, cooked
- Red Otter Farms Super Kale, roughly chopped
- 1 cup Chickpeas, boiled
- 1 red bell pepper, chopped
- 1 Onion, chopped
- 1/4 cup Feta cheese
- Handful of Almonds, sliced
- 2-3 tablespoon Lemon juice
- Salt & black pepper, to taste
Instructions:
Step 1:
In a large bowl toss Quinoa, chickpea, kale, onion, bell pepper & almonds
Step 2:
Add lemon juice, salt & pepper, cheese and toss again.
Serve!
