Moroccan Potato Salad

Serves: 2  |  Preparation & Cooking Time: 30 minutes


• 4-5 potato, medium size

• 3/4 cup fresh parsley, minced

• 1 onion, minced

• 1 clove garlic, peeled & minced

• 1 tsp olive oil

• Salt & pepper, to taste


Step 1

Place the potatoes in a pot of cold salted water. Cook over medium heat, until tender. Drain potatoes & cool

Step 2

Combine parsley, onion, garlic & oil in a bowl. Season with salt & pepper

Step 3

Peel potatoes, then coarsely chop; add to the dressing mix

Step 4

Serve at room temperature
