Mediterannian Style Okra

Mediterannian Style Okra is a type of vegetable dish that is traditionally cooked with olive oil, garlic, onion, tomatoes, lemon juice, coriander and herbs. Serves: 4  |  Preparation & Cooking Time: 35 minutes

Ingredients:

  • 500g okra, cut into rounds
  • 1 small onion, chopped
  • 4 garlic cloves, minced
  • 1 ½ cup tomato, crushed
  • 1 tomato, cut into round slices
  • 1 tablespoon lemon juice
  • ½ teaspoon coriander
  • ½ teaspoon chili powder
  • Salt & pepper
  • 2 green chilies, chopped
  • Extra -virgin olive oil

Instructions:

Step 1

 Heat the olive oil in a skillet over medium heat. Add onion, garlic, chilies and cook for 4-5

minutes.

Step 2

Add the okra and sauté for 5-6 mins, season with salt & pepper. Toss to coat.

Step 3

 Add the crushed tomato and water. Stir to combine. Layer the tomato slices on top, bring it

to a boil, turn the heat to low and cover it. Let it cook for 15-20 mins, till the okra has

softened. Uncover and add lemon juice. Serve hot.
