Mediterannian Style Okra

Ingredients:
- 500g okra, cut into rounds
- 1 small onion, chopped
- 4 garlic cloves, minced
- 1 ½ cup tomato, crushed
- 1 tomato, cut into round slices
- 1 tablespoon lemon juice
- ½ teaspoon coriander
- ½ teaspoon chili powder
- Salt & pepper
- 2 green chilies, chopped
- Extra -virgin olive oil
Instructions:
Step 1
Heat the olive oil in a skillet over medium heat. Add onion, garlic, chilies and cook for 4-5
minutes.
Step 2
Add the okra and sauté for 5-6 mins, season with salt & pepper. Toss to coat.
Step 3
Add the crushed tomato and water. Stir to combine. Layer the tomato slices on top, bring it
to a boil, turn the heat to low and cover it. Let it cook for 15-20 mins, till the okra has
softened. Uncover and add lemon juice. Serve hot.
