Herbed Tomato Salad
Serves: 4 | Preparation & Cooking Time: 20 minutes
- 5-6 medium size Tomato, cut in chunks
- Fresh Parsley or Celery stalks, roughly chopped
- 1 Onion, chopped
- 1/4 cup Green Olives
- 1-2 Garlic cloves, minced
- 2 tablespoon Olive oil
- 1 tablespoon Lemon juiceSalt & black pepper, to taste
In a large bowl, toss Tomato, Parsley/Celery, Onion, Garlic and Olives
Drizzle olive oil lemon juice, salt & pepper and toss to coat.
Let the salad marinate for about 15 minutes for the flavours to blend. Serve!
