Herbed Tomato Salad
Herbed Tomato Salad is a delicious, light and healthy salad. It is made of cherry tomatoes, fresh herbs, olive oil and balsamic vinegar. It is a great side dish or addition to your meal. The tomatoes are best when they are perfectly ripe, so choose them carefully. The herbs will give the salad a nice flavour, and the olive oil and balsamic vinegar add a nice balance of flavor.
Serves: 4 | Preparation & Cooking Time: 20 minutes
Ingredients:
- 5-6 medium size Tomato, cut in chunks
- Fresh Parsley or Celery stalks, roughly chopped
- 1 Onion, chopped
- 1/4 cup Green Olives
- 1-2 Garlic cloves, minced
- 2 tablespoon Olive oil
- 1 tablespoon Lemon juiceSalt & black pepper, to taste
Instructions:
Step 1:
In a large bowl, toss Tomato, Parsley/Celery, Onion, Garlic and Olives
Step 2:
Drizzle olive oil lemon juice, salt & pepper and toss to coat.
Step 3:
Let the salad marinate for about 15 minutes for the flavours to blend. Serve!
