Ingredients:
- Red Otter Farms PowerGreens
- 1 Red Bell Pepper, diced
- 1/2 cup Spring Onion
- 3 cups Vegetable broth
- 2-3 cups Water
- 3 tablespoon Butter
- 2 tablespoon Cream Cheese
- 1 tablespoon Olive oil
- Salt & Black Pepper, to taste
Instructions:
Step 1:
In a saucepan, heat oil over medium heat. Add the bell pepper, spring onion and saute, until the pepper is tender
Step 2:
Add the greens and cook, until wilted. Add vegetable broth, water, salt & bring to a boil over medium heat. Reduce to a simmer, and cook, uncovered, for about 5 minutes
Step 3:
Add butter and cream cheese and cook for a minute or until they have melted and the soup is slightly thickened. Put the soup in a blender and puree. Transfer back into the saucepan, reheat and serve
