Creamy Carrot Soup

Ingredients:
- Red Otter Farms Microgreens
- 400 grams Carrot, peeled & diced
- 2 medium Onions, chopped
- 2 tablespoon extra virgin Olive oil
- 1 teaspoon Garam Masala
- Rock salt, to taste
- Black pepper, to taste
- 1 tablespoon Lemon juice
- 1 can of Coconut milk
Instructions:
Step 1:
Season the carrots & onions with salt & pepper & drizzle some oil. Roast them for about 25-30 mins
Step 2:
Add coconut milk & water in a blender. Add the roasted vegetables to it along with lemon juice. Puree until smooth & creamy
Step 3:
Transfer the soup to a pan, heat it and then transfer into soup bowls
