Chickpea Salad Sandwich
Serves: 2 | Preparation & Cooking Time: 15 minutes
- Red Otter Farms Lettuce greens
- 1 cup Chickpea, boiled
- 1/3 cup Walnuts, chopped
- 4 Bread sliced, toasted
- 6 tablespoon Greek yogurt
- 1 teaspoon Dijon Mustard
- 2 tablespoon Honey
- 1 small Onion, thinly chopped
- 1 Tomato, thinly sliced
- Salt & pepper, to taste
Add chickpeas to a bowl and slightly mash with a fork. Add walnuts, greek yogurt, dijon mustard, onion, honey and mix together. Season with salt & pepper.
Layer the toasted bread with lettuce and spread the chickpea mixture and a layer of tomato slices. Top it with the other slice of bread and serve.
