Caesar Pasta Salad
Caesar Pasta Salad is a classic and delicious salad that is packed with healthy ingredients. It is made with cooked fusili/penne pasta, garlic, parmesan cheese, and Dijon mustard dressing. The pasta is cooked according to package instructions and then cooled. The garlic and parmesan cheese are then added and the pasta is tossed with the Dijon mustard dressing. This salad is a great way to get your daily dose of greens and healthy fats. Enjoy it as a side dish or a light lunch.

Ingredients:
- Red Otter Farms Romaine Lettuce
- 150 gm fusili / penne pasta cooked al dente
- 1 Tomato, diced
- Handful of bread croutons
- For Dressing
- 2 tsp Mayo
- 2 tsp Dijon mustard
- 2 garlic cloves, crushed
- 2 tsp Lemon juice
- 2 tsp olive oil
- Salt & black pepper, to taste
- Grated Parmesan cheese
Instructions:
Step 1
For the dressing: Put mayo, dijon mustard, garlic clove, lemon juice, salt & pepper in a food processor and blend until smooth. Add olive oil and blend until thick & creamy. Add Parmesan cheese and blend it again. And your dressing is ready.
Step 2
Roughly chop the Romaine leaves and put them in a salad bowl. Add tomatoes and cooked pasta, and toss.
Step 3
Add caesar dressing and toss to evenly coat the salad ingredients.
Step 4
Top it with some croutons and Serve!
