Baked Eggs with Swiss Chard

Baked eggs with Swiss chard is a delicious and healthy dish that is perfect for breakfast, lunch, or dinner. It is a great way to get your daily dose of vegetables and protein in one easy meal.

Serves: 2  |  Preparation & Cooking Time: 25 minutes


  • Red Otter Farms Swiss Chard
  • 1 Garlic clove, minced
  • 4 Eggs
  • 1 tsp Olive oil
  • 1 tsp Parmesan cheese, finely grated
  • Salt & black pepper, to taste


Step 1:

Preheat the oven to 400 degrees. Carefully break the eggs in a bowl, so that the yolks remain intact. Set aside.

Step 2:

In a large skillet, heat the olive oil over medium heat. Add the garlic and cook for a minute or two, until just beginning to brown. Add the greens to the skillet and cook, stirring occasionally until the greens begin to wilt, for about 2-3 minutes

Step 3:

Remove the greens from the heat and divide into and divide into two baking dishes. Top each with two eggs. Drizzle each dish with the cream, the top with Parmesan and a pinch of salt & pepper

Step 4:

Bake for 10-15 minutes. Serve immediately.
