Autumn Salad Bowl

Ingredients:
For salad:
- 2 cups cooked quinoa
- 2 cups mixed salad greens
- ¼ cup raw pecans
- ¼ cup feta cheese, crumbled
- 1 avocado, sliced
- 1 apple, sliced
- ¼ cup dried apricots (optional)
For dressing:
- Juice of 2 lemons
- 2 tablespoon honey
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 4 tablespoons extra virgin olive oil
- Salt & pepper, to taste
Instructions:
Step 1
In a small bowl, whisk all the ingredients of the dressing until combined well.
Step 2
In a large salad bowl, mix quinoa, salad greens, apple, dried apricots, toss well and then add
avocado.
Step 3
Drizzle the dressing on the salad, top it with pecans and feta, and serve.
