Autumn Salad Bowl

An autumn salad box is a great way to get your daily servings of fruits and vegetables. It usually contains a colorful mix of seasonal produce such raw pecans, avocado, dried apricot, salad greens and other leafy greens. Serves: 4  |  Preparation & Cooking Time: 25 minutes

Ingredients:

For salad:

  • 2 cups cooked quinoa
  • 2 cups mixed salad greens
  • ¼ cup raw pecans
  • ¼ cup feta cheese, crumbled
  • 1 avocado, sliced
  • 1 apple, sliced
  • ¼ cup dried apricots (optional)

For dressing:

  • Juice of 2 lemons
  • 2 tablespoon honey
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 4 tablespoons extra virgin olive oil
  • Salt & pepper, to taste

Instructions:

Step 1

 In a small bowl, whisk all the ingredients of the dressing until combined well.

Step 2

 In a large salad bowl, mix quinoa, salad greens, apple, dried apricots, toss well and then add

avocado.

Step 3

 Drizzle the dressing on the salad, top it with pecans and feta, and serve.
