Shaved Carrot & Radish Salad

Ingredients:
- 3 tablespoon Orange juice
- 3 tablespoon Lemon juice
- 1 tablespoon Honey
- 3 teaspoon Olive oil
- 2 orange Carrots, shaved lengthwise
- 3 – 4 Red Radish, sliced
- 5-6 Mint leaves, roughly chopped
- 1 small Beet, shaved
- 1 small Orange, peeled & sliced into halves
- Salt & pepper, to taste
Instructions:
Step 1
For dressing – In a small bowl, whisk together orange juice, lemon juice, honey, olive oil & salt & pepper.
Step 2
Toss vegetables & orange in a large bowl.
Step 3
Drizzle the dressing & toss again. Serve!
