Kale Pesto Mini Pizza
Kale Pesto Mini Pizza is a healthy and delicious snack. It is made with a combination of pizza dough, kale, Parmesan cheese, and chicken breast. The dough is rolled out and spread with the kale. The mozzarella cheese is then added and the pizzas are topped with chicken sliced . These mini pizzas are baked in the oven until the cheese is melted and the crust is golden brown. Ingredients:
- Red Otter Farms Kale, stems removed
- 4 Garlic cloves
- 1/4 cup Parmesan cheese, shredded
- 4 mini pizza base
- 2 Chicken breast, cooked & diced
- 1 cup Mozzarella cheese, sliced
- Salt & pepper, to taste
Instructions:
Step 1
Bring a pot of water to boil, add kale & garlic and cook for about 5 minutes or until kale is softened.
Step 2
Blend kale, garlic, parmesan cheese, salt & pepper to make pesto.
Step 3
Put a spoon of pesto on the pizza base, add cheese and top with mozzarella cheese. Arrange pizzas on the baking sheet.
Step 4
Bake in the oven until mozzarella cheese is melted and lightly browned. Serve hot!
PRO TIP: For vegetarian recipes, swap chicken with mushroom.
