Basil Stuffed Mushroom

400 gms button Mushroom
1 large Tomato, coarsely chopped & deseeded
100 gms Cream Cheese
1 tablespoon chopped fresh Basil
1 teaspoon Garlic, diced
1/4 cup Parmesan cheese
Instructions:
Step 1
Preheat the oven to 400 degrees F. Wash the mushrooms & carefully remove all the stems. Place all the mushroom caps on a foil lined baking sheet and set aside.
Step 2
Roughly chop the mushroom stems and place in a small bowl. Add the tomatoes, cream cheese, basil, garlic & parmesan and mix to combine.
Step 3
Stuff the mushroom caps with the mixture and sprinkle some Parmesan cheese over the top. Put it in the oven for 10 minutes. Remove from the oven & serve immediately.
