Sunshine Salad Dressing

Sunshine salad dressing is a creamy, zesty dressing made with lemon juice, Dijon mustard, honey, and olive oil. It’s a great way to add flavor and extra nutrients to your salads. To make it, simply combine the lemon juice, Dijon mustard, honey, and olive oil in a blender and blend until smooth. You can adjust the flavor and consistency by adding more of any of the ingredients. Enjoy your sunshine salad dressing on top of your favorite salads!

Serves: 20  |  Preparation & Cooking Time: 10 minutes


• 1/2 cup plain Greek Yogurt

• 1/4 cup Olive Oil

• 1/4 cup Dijon Mustard

• 3-4 tablespoons Honey

• 2 tablespoons Lemon Juice

• 2 tablespoons Apple Cider Vinegar, or more Lemon Juice

• 1 clove Garlic, minced

• Salt & freshly ground Black Pepper, to taste


Step 1

In a bowl, combine all of the ingredients. Whisk until blended.

Step 2

Taste, and season with additional pepper or honey, if required.

Step 3

Cover and refrigerate it. Can be used for 10-15 days.
