Coconut Basil Sorbet

Coconut basil sorbet is a light and refreshing frozen dessert made with unsweetened coconut milk, basil, lemon juice and a pinch of salt.   • 2 cups unsweetened coconut milk
  • 1 tablespoon basil, chopped
  • 1 1/2 cups sugar
  • 1 teaspoon ginger, grated
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 2 cups water


Step 1

In a saucepan, add water & sugar and bring it to boil. Remove from heat, stir in basil & ginger and let the syrup cool.

Step 2

Put syrup, coconut milk, lemon juice, lemon zest and salt in a food processor and blend it well.

Step 3

Pour the mixture into a baking pan and freeze it for 10-12 hours. Once set, serve it with a topping of fresh basil leaves.
