Caprese Rocket Flatbread

Caprese Rocket Flatbread is a delicious Italian-style dish made with a flatbread base, topped with tomatoes, mozzarella, rocket, and a balsamic reduction glaze. This dish makes for a great light lunch or snack and is sure to please any pizza lover. It is easy to make and can be prepared with minimal ingredients. The combination of flavours from the tomatoes, mozzarella, rocket, and balsamic reduction creates a unique and delicious flavour.

Serves: 4  |  Preparation & Cooking Time: 20 minutes


For Base:

  • Red Otter Farms Zesty Rocket
  • Handful of Basil leaves
  • 8-10 Cherry Tomatoes, cut in halves OR 2 medium size Tomato, sliced
  • 2 Flatbreads
  • 1/2 cup Mozzarella cheese
  • 4-6 slice of Mozzarella cheese

For Sauce:

  • 1 cup Tomato puree
  • 2 tablespoon Olive oil
  • 1/4 teaspoon Oregano
  • 1/4 teaspoon Black Pepper
  • A pinch of chilli flakes
  • Salt, to taste


Step 1:

Preheat the oven to 425F and line the baking sheet with parchment paper.

Step 2:

Combine all the sauce ingredients in a bowl & mix. Slowly add water until you reach the desired consistency to be spread on the bread.

Step 3:

Spread the sauce on the flatbread. Sprinkle the cheese & bake for 10 mins, until the cheese is melted.

Step 4:

In a bowl combine caprese – mozzarella slices, tomato, basil, olive oil, salt & pepper & toss

Step 5:

When the pizza is ready, remove from the oven and let it cool.

Step 6:

Cut the flatbread into halves and layer it with caprese & rocket leaves.
