Caprese Rocket Flatbread
Serves: 4 | Preparation & Cooking Time: 20 minutes
- Red Otter Farms Zesty Rocket
- Handful of Basil leaves
- 8-10 Cherry Tomatoes, cut in halves OR 2 medium size Tomato, sliced
- 2 Flatbreads
- 1/2 cup Mozzarella cheese
- 4-6 slice of Mozzarella cheese
- 1 cup Tomato puree
- 2 tablespoon Olive oil
- 1/4 teaspoon Oregano
- 1/4 teaspoon Black Pepper
- A pinch of chilli flakes
- Salt, to taste
Preheat the oven to 425F and line the baking sheet with parchment paper.
Combine all the sauce ingredients in a bowl & mix. Slowly add water until you reach the desired consistency to be spread on the bread.
Spread the sauce on the flatbread. Sprinkle the cheese & bake for 10 mins, until the cheese is melted.
In a bowl combine caprese – mozzarella slices, tomato, basil, olive oil, salt & pepper & toss
When the pizza is ready, remove from the oven and let it cool.
Cut the flatbread into halves and layer it with caprese & rocket leaves.
